Marshmallow Swiss roll recipe

Ingredients

Swiss roll base

3 eggs

1 1/2 dl sugar

1 1/2 dl gluten-free flour mixture or potato flour

1 tsp baking powder

Filling

1 dl of cranberry puree

1 cup unflavored curd/quark

2 dl whipped cream

Halvan Väiski marshmallows in pieces

Sugar to taste

Recipe

  1. Beat the eggs and sugar until foamy, add the flour and baking powder.
    Bake on a baking sheet at 200 degrees for approx. 10 minutes.
    Whip the whipped cream and add the other ingredients into the cream.
    Fill the Swiss roll base with the mixture, save a little filling for frosting.
    Cut the filled Swiss roll in half and place the halves on top of each other.
    Use the filling you saved as frosting and cover the whole roll to help the marshmallows stick better.
    Cut the marshmallows in half lengthwise and decorate the cake.
